Fresh Fruit Tart
Cookie Crust, Cream Cheese Spread, Fresh Fruit, Glaze

Crust:
400 at 8 minutes
1 c. flour
c. sugar
t. almond extract
c. butter or margarine
1 beaten egg yolk
t. vanilla

Mix thoroughly and press into a pizza pan or other tart pan. Bake at 400 degrees for 8 minutes or until slightly golden

Cream cheese spread
Beat 1 package of with a little sugar ( c.) and t. almond extract until it is whipped and spreadable. Spread on cooled crust.

Fruit
Cut a variety of fruit into small pieces and arrange over the cream cheese on the tart.

Glaze
2 T. concentrated Orange Juice (frozen concentrate)
4 oz ( c.) apricot jam
c. water
1 T. corn starch
a dash of light rum or brandy

Put all ingredients in a small – medium saucepan and cook down until it is slightly thickened. Cool and then spoon over tart.

Chill until you serve. Serve within one day.
