Quick and Chewy Oatmeal Cookies

Temperature: 350 degrees Fahrenheit   

Time: 10 -12 minutes

Yield: about 5 dozen 2-inch cookies

Ingredients:

1 cup light brown sugar, packed

1 cup granulated sugar

1 cup corn oil, safflower oil or other mild salad oil

2 eggs

2 Tbsp. milk

1 tsp. ground cloves

1 tsp. ground nutmeg

1 tsp. ground cinnamon

1 tsp. baking soda

2 cups all purpose flour, unsifted but spooned gently into measuring cup

2 cups OLD FASHIONED oats

1 cup raisins

1 cup chopped nuts (optional)

Cream brown sugar, granulated sugar, oil, and eggs. Add milk. Add spices and baking soda. Blend in flour and oats. Add raisins and, if desired, nuts and blend well. Grease cookie sheets. Drop by heaping teaspoonsful on cookie sheets. Bake 10-12 minutes at 350 degrees Fahrenheit until very light brown on edges. Let sit on cookie sheet about 5 minutes before removing to cooling rack. These cookies remain soft and chewy and keep well for several days. They also can be frozen. I often double the recipe with no ill effect.

Note: If you have a good electric mixer, dump all ingredients in bowl and blend well to save time. Then drop on cookie sheet and bake as above.
