Russian Fruit-Filled Pastry

Beat the following ingredients until light and fluffy:

3 egg yolks

1 whole egg

1 c. sugar

3 cups butter (preferably sweet)

To the beaten mixture, add:

½ teaspoon vanilla

(For cherry or peach filling, add ½ teaspoon almond extract)

½ teaspoon salt (omit if salted butter is used)

½ teaspoon baking soda

4 cups flour (or more if required to keep dough from sticking to hands)

Pat two-thirds of dough into 15 x 10 inch jelly roll pan. Spread large can of fruit filling over the dough in the jelly roll pan. Top with remainder of dough crumbled into small pieces and sprinkled over the fruit filling. Bake at 350º for 40-45 minutes until dough on top is light gold.

Cool and cut in squares to serve.
