Cottage Cheese Curry Sauce

1/3 cup butter or ghee (you can use slightly less ghee)

2 teaspoons curry powder

1 teaspoon ground cumin

1 tablespoon cornstarch

2 cups cottage cheese

In a heavy Teflon skillet, melt butter or ghee and add spices and cornstarch. Mix with a whisk to assure that there are no lumps.

Add cottage cheese. Beat with whisk until smooth. If necessary, add 1 - 2 tablespoons of liquid (preferably milk) to the mixture.

Serve over steamed vegetables. This is especially good with a combination of broccoli, cauliflower, and potatoes.
