Oatmeal Chocolate Chip Cookies
(I usually cut the recipe in half)
2 cups butter (softened)
2 cups sugar
2 cups brown sugar
2 ½ tsp vanilla
4 cups flour
2 tsp. baking soda
5 cups blended oatmeal*
1 tsp salt
2 tsp baking powder
(Optional: 3 cups chopped nuts)
* measure the oatmeal and then blend in a blender until it is powdery, with no large pieces
Cream the butter with the sugar and brown sugar.
Add the eggs and vanilla and blend.
Add the flour, oatmeal, salt, baking powder and baking soda and blend thoroughly.
Mix in the chocolate chips (and nuts, if desired).
Roll the dough into balls and place them approximately 2 inches apart on a cookie sheet.
Flatten each one slightly. Bake for 10 minutes at 375 degrees.
